a little bit of butterscotch goes a long way…
 
After my Dad had a rather excitable banana buying spree in the supermarket, we ended up with a fruit bowl of soft (and slightly browning) bananas by the end of the week. Although banana bread is a simple, tried and tested recipe, I wanted to try something a little different and the introduction of butterscotch came into play. 
 
I baked this batch in the oven and then served it up with hot butterscotch sauce, recipe below.
 
As you can see, it went down a treat!

Simply Irresistible Butterscotch Sauce

 
Makes a reasonable jug
 
50g butter
50g caster sugar
75g light brown sugar
150g golden syrup
110ml double cream
few drops of vanilla essence
 
1 Put the butter, both the sugars and golden syrup in a saucepan and heat gently until the sugars have dissolved and the mixture is blended. Ensure you mix constantly with a wooden spoon to stop the sugar crystallising.
2 Once everything is smooth and combined, keep on a low heat for a 5mins more and continue to stir.
3 Take off the heat and pour in the double cream and the vanilla essence. Stir for a further 2mins, until thoroughly mixed and smooth. 
4 Pour into a jug and serve immediately.
