If I’d let the fear of “I’m not good enough” rule me, I wouldn’t be where I am today. This year has been more than I dreamed of, and I’ve achieved more than I could have imagined. Thanking my past self for having the courage and being brave ⚡️

I feel like there are two types of people in this

I feel like there are two types of people in this world:

1. People who love pancakes.

2. PEOPLE WHO LOVE PANCAKES!

Which one are you? The most incredibly light and fluffy pancakes made with speckled brown butter for you this morning, drizzled in delicious chocolate sauce. I promise these will blow your mind.

Made with the very best, @kerrygold_uk unsalted butter. Dreams my friends! This is what breakfast dreams are made of.

INGREDIENTS
200g plain flour
1 tbsp baking powder
Pinch of salt
1tbsp caster sugar
1tsp ground cinnamon
1 large egg
300ml milk
Browned butter, to fry

METHOD
Add the dry ingredients to a mixing bowl. Beat the egg and milk into the mixture with a handheld or electric whisk. Heat a non-stick frying pan over a medium heat and add some butter then fry in small ladlefuls until firm and little bubbles begin to appear. Flip and fry the other side until golden. Serve with yoghurt, chocolate sauce, fresh fruit and nuts.

Last week I shared a delicious Battenberg cupcake recipe as a teaser for my new baking series: British Combo Bakes. While I probably won’t be making a fish and chips cake 🤢, there are some signature pairings that us Brits LOVE!

This week I’m kicking off with these Crumble and Custard Muffins - a classic combo that is delicious any time of year! Delicate pear, a fluffy interior filled with vanilla custard and an oaty cinnamon crumble topping. Eat with your morning coffee, after dinner or just as an afternoon snack 😉

Who’s got a date with Barbie this weekend? 🙋🏼‍♀️💖

These Barbie-inspired Battenberg cupcakes are a fun and colourful twist on a classic British bake. Think fluffy pink almond sponge marbled with Funfetti vanilla sponge, filled with sweet @stdalfourukofficial Raspberry Jam and topped with a marzipan buttercream icing 🤌🏼

YOU’L NEED:
120g @kerrygold_uk unsalted butter
120g @tateandlylesugars caster sugar
2 large @thehappyeggco free-range eggs
1tsp @nielsenmasseyuk vanilla extract
1tsp @nielsenmasseyuk almond extract
120g @homepridebaking self-raising flour
25g @sweetapolita Birthday Party Deluxe Sprinkles
50g @stdalfourukofficial raspberry jam

FOR THE BUTTERCREAM
120g @kerrygold_uk unsalted butter
275g @tateandlylesugars icing sugar
1tbsp @arlacravendale milk
1tsp @nielsenmasseyuk almond extract

Team custard cream or chocolate digestive?

(Or maybe even a ginger nut?!) Probably the top three dunkers of all time. Kid me not when I say that making your own homemade versions of these biscuits makes them taste SOO much better. Remember to save this recipe for later 😉 and let me know your fave in the comments below (because this debate needs debating!)

FOR THE BISCUITS
175g plain flour
45g @birdseyeuk custard powder
1tsp baking power
50g unsalted @kerrygold_uk butter, cubed
50g Trex shortening, cubed
45g caster sugar
1 large egg
1tbsp milk

FOR THE CUSTARD CREAM
15g @birdseyeuk custard powder
100g icing sugar
50g unsalted @kerrygold_uk butter
1tbsp boiling water

1. Preheat your oven to 160C / 350F.
2. Sift the flour, custard powder, + baking powder into a bowl, mix and then add the butter and Trex. Rub together with your fingertips to form a mixture resembling breadcrumbs.
3. Add the egg and milk, bringing the mixture together to form a dough. Be careful not to overwork it, then flatten to a disc and refrigerate for 20mins.
4. Roll the dough on a lightly floured surface and cut an even number of fluted rounds. Bake for 15mins until golden and leave to cool on a rack.
5. For the custard cream, sift the custard powder and icing sugar together into a stand mixer fitted with a paddle attachment then add the butter. Combine until it comes together like buttercream and add 1tbsp boiling water, mixing thoroughly.
6. Sandwich two biscuits together with the buttercream, and repeat for all the biscuits.

When there’s sunshine in the UK, I’m embracing it! And if you love s’mores inspired desserts, then you’re going to LOVE this ice cream. This delicious recipe has all the nostalgic flavours of classic s’mores and the great outdoors – with no camp fire required!

It’s packed full of @epicsnax’s chewy, gooey Giant Toastin’ Marshmallows, crumbled digestives and Oreos, chocolate chips and chocolate fudge sauce — all mixed in to a creamy marshmallow base 🤤 It’s also a no-churn recipe. Little effort = big reward. It just doesn’t get better than that! 🔥

This Maple Sumac Lamb is the very best dish for impressing guests this summer. Juicy lamb loin, fresh vibrant couscous and the most delicious flatbreads to pair with it. Cook it in a pan, or on the barbie!

This shot really squeezed me out of my comfort zone 😉 Hard light using one light source (V860iii speedlite, no modifier), photoshop composites (because how can you be on two sides of one photo at any one time?!), a level of retouching, bright and bold colours, and a strong arm to hold that racket 💪🏼😂 So different to my normal style but I kind of love it?⁠

As a big tennis player (and with Wimbledon coming up), this felt pretty fitting. Nothing quite like having a cold aperol spritz in hand while watching a few sets 👀⁠

BBQs are all about bringing people together, inciting conversation and laughter over food, and vibrant summer colours. That's why I chose to use @cblbackdrops 'Sun Drenched Copper', play with split complementary colours (pinks, oranges and greens) and include a human element in my image. ⁠

It might only be Wednesday but this frosé rosé i

It might only be Wednesday but this frosé rosé is a drink for every day of the week 🍷

You’ll need:
🍷 1 bottle / 750ml rosé
🍓 100g strawberries, halved
🫙 1 can lychees in syrup
🥄 2 tbsp @cointreau
💚 Juice of 1 lime
🌹 1/4 tsp @nielsenmasseyuk rose water
🤍 75g granulated sugar
💗 2 tbsp dried roses, crushed from @souschefuk

{Serves 6}
1. Pour your rosé into a food bag and pop in the freezer overnight.
2. Tip the canned lychees and the juice, along with the halved strawberries, into a small saucepan and bring to a gentle boil. Simmer for 5 minutes until the syrup is pink and slightly reduced.
3. Strain the fruit and syrup through a small sieve and chill in the fridge. Eat the fruit on porridge in the morning 🥰
4. Make petal sugar by pulsing the dried roses with the granulated sugar and placing on a plate. Run a halved strawberry round the rim of each glass and press the rims into the rose sugar to coat.
5. Whizz the frozen rosé, lychee and strawberry syrup, rose water, cointreau and lime juice in a blender or nutribullet until slushy. Pour into your glasses and serve immediately.

As someone who’s on the go a lot, I absolutely LOVE to pop @thecollectiveuk’s Suckies in my rucksack for a breakfast or snack on the move. This small personal project was:

👉🏼 Lit with Godox SL150 (no modifier) continuous lighting

👉🏼 Consisted of 88 images

👉🏼 Shot on @clubbackdrops Coral waterproof, wipe-clean backdrop

👉🏼 Shot with a Canon 5D Mark iii camera body + 50mm lens

Top tip: freeze them for summer 😉 fro-yo on the go? Yes please!
