I’m just going to be super blunt with you right

I’m just going to be super blunt with you right now. You’re too good to suck.

But when I first started out, I kinda sucked too.

I had absolutely no idea when I first started out that my obsession with taking photos and videos of food using just my iPhone and posting them on instagram would change my life.

I mean, it sounds kind weird right?

But when you have a strategy and a framework behind your food videos that gets you noticed, THAT’S when things can lead to life changing opportunities.

And the thing is: I’ve done this with less than 10k followers. I love you all, truly(!) but follower count was never something I strived for. I wanted to create work that wowed, quality over quantity, to have a community that engaged with me and the work I do. So I’m thankful to those of you that ARE here, for the clients who have and who are working with me, for everyone’s love and support 🙏🏼 BUT at the VERY beginning I totally thought followers = big waves.

One of the questions I get all the time from people dying to start their own thing is this:

How did you get started? I just decided I had to do it.

I still had a full time job — but in every spare moment I practiced and experimented, in my super small Finsbury Park kitchen (we’re talking no dishwasher guys!), taking photos and short videos on a tiny table, with my iPhone.

At the beginning, none of it was reeeeally that great 😂 but it was real and it gave me joy.

So l ask you - what gives you joy? What is something you just HAVE to do because it gives you too much joy to ignore it?

🐰 MY FAVOURITE EASTER DESSERT 🐰

I’d be lying if I said I didn’t have this Hot cross Bun + Butter Pudding on my baking list every 👏🏼 single 👏🏼 year 👏🏼

This is a winning dessert every time and I personally love it for the ease in which you can make it, but also for its full and rounded flavour.

Here are my top tips for making the very best pud:
💛 Choose high-quality hot cross buns for the best flavour (stale ones can be used too! They don’t have to be fresh)
💛 Make the custardy filling with a combination of spice-infused condensed milk, cream and milk, elevated with a little vanilla bean paste
💛 Add in some orange zest for a citrusy zing
💛 Finish with a sprinkle of demerara sugar before baking for a delightful crunchy topping!

We’re absolutely over the moon, but I'm also acutely aware that an announcement like this can be a trigger for those who have or are experiencing loss and/or are navigating their own fertility journey – or choosing not to navigate it at all. I always want to try and be as sensitive to everyone and anyone experiencing their own unique journey. Pregnancy announcements on social media (or face to face, or via a message) are, undoubtedly, incredibly hard if you're trying to conceive. And conceiving can take a variety of paths – some of which are lonely/painful/sad.⁠ Sending love to anyone that needs it right now ❤️⁠

It’s been a wild ride so far to say the least. Morning sickness is no joke and I’m not quite sure how I muddled through weeks 8-20 throwing up every day 🙈 But we're slowly coming out the other side of it and are looking forward to what's to come! ⁠👶🏼

I'm gonna spill the one thing about this cake that makes it amazing:⁠

White chocolate buttercream. Because who can really resist swirling dreamy, creamy buttercream on top of soft, springy sponge? Not me! ⁠

The sponge is made with sweet morsels of white chocolate and creamy ground pistachios for a lavish flavour and laced with hints of cardamom and rose for a delicate, spring-like taste. This is a cake I PROMISE YOU everyone will love 💓 ⁠

Persian Love Cake. Kick off the week with this DIVINE cake made with ground almonds, ground pistachios, delicate rose water and zesty citrus fruits. ⁠
⁠
Here's why I love this cake sooo much:⁠
💗 It has a light sponge⁠
💗 It keeps considerably well⁠
💗 It's even tastier eaten cold, after a few days⁠

Are you team Jammy Dodger or Custard Cream?

Personally, I'll take one of each 😅These are two of my FAVE homemade biscuit recipes that are perfect to give to anyone you love this month. Remember to bookmark the recipes! ❤️

JAMMY DODGERS
375g plain flour
110g unsalted butter
100g vegetable shortening
125g caster sugar
2tsp vanilla paste
3 egg yolks
Jam
Icing sugar

1. Sieve the flour into a bowl. Add the butter + shortening. Rub together until it resembles breadcrumbs. ⠀
2. Add the sugar, mix + beat in the vanilla + egg yolks.
3. Bring the dough together until it’s even in colour. Rest in the fridge for 30mins.
4. Preheat oven to 180C/160C fan/350F.
5. Remove the dough from the fridge + roll to a thickness of half a cm.
6. Cut fluted rounds, then cut hearts out of the centre of half the rounds + place them all on a baking tray lined with parchment paper.
7. Bake for 10mins + leave to cool completely on the tray. ⠀
8. Dust the heart cookies with icing sugar, spread raspberry jam on the others + sandwich the top and bottoms together.

CUSTARD CREAMS
For the biscuit:
175g plain flour
3tbsp custard powder
1tsp baking powder
50g unsalted butter
50g vegetable shortening
36g caster sugar
1 egg
1tbsp milk

For the custard cream:
1tbsp custard powder
100g icing sugar
50g unsalted butter
1tsp boiling water

1. Preheat oven to 180C/160C fan/350F.
2. Sieve flour, custard powder + baking powder to a bowl, then add the butter + shortening. Rub everything together until it resembles breadcrumbs.
3. Tip in the sugar, then beat the egg and tablespoon of milk tin a separate bowl together. Add the milk mixture cautiously - you may not need all of it - to form dough ball, and rest in the fridge for 20mins.
4. Roll the dough out + cut an even number of hearts using a heat-shaped cookie cutter.
5. Bake for 15mins, then let the biscuits cool on a rack before sandwiching them.
6. Meanwhile, make the custard cream by mixing the custard powder + icing sugar. Add the butter + whisk using an electric whisk until you get a smooth cream. Add 1tsp boiling water + mix again.
7. Sandwich each biscuit with about 1tsp custard cream.
